Easy Vegan Potato Waffles (Savory Hash Brown Waffles)

These savory Vegan Potato Waffles make a delicious snack, breakfast or main dish. They are crispy on the outside, soft and almost creamy on the inside, and they taste amazing. They are also very customizable with extra spices and add-ins, plus you can play around with all the topping options.

Vegan Potato Waffles are similar to hash browns or rösti, just shaped into waffles, which means more crispy edges and built-in pockets for toppings. They’re also incredibly practical. The batter comes together in minutes, and you don’t need anything fancy. Just potatoes, a bit of rice flour, spices, and a waffle iron. You can keep them simple with salt and pepper or turn them into something bold with smoked paprika, garlic, herbs, or chili.

How to make Vegan Potato Waffles

Start by peeling and grating the potatoes. This step is important: squeeze out as much liquid as possible using a clean kitchen towel. Removing excess moisture helps the waffles crisp up properly instead of steaming inside the iron.

Transfer the grated potatoes to a bowl and mix with rice flour, garlic powder, smoked paprika, salt and pepper, or whatever spices you like. The mixture should hold together lightly when pressed but not be wet. Preheat your waffle iron well (this also helps with crispiness), then brush or spray it with oil.

Add a thick layer of the potato mixture (about 1 inch/2.5 cm), close the waffle iron, and cook until golden and crisp, about 5 minutes depending on your machine. Carefully remove and repeat with the remaining mixture. Serve immediately for the crispiest texture, or let them cool slightly before adding your favorite toppings.

How to serve Vegan Potato Waffles

You can serve these potato waffles as a snack with dipping sauce of your choice, or as a main dish with your favorite toppings and a side salad. They are best served fresh, but they are also delicious the next day straight from the fridge.

You can add so many toppings to these babies, depending on what you are craving or what needs to be gone from your fridge. Some of my favorite combos are:

  • Garlicky yogurt or sour cream + green onions
  • BBQ sauce, jackfruit, shredded vegan cheese
  • Whipped tahini, garlicky spinach, chili
  • Ajvar + vegan feta
  • Pesto, vegan parmesan, cherry tomatoes, toasted pine nuts
  • Chickpea and tomato salad, pickled onions
  • Almond dip, sun-dried tomatoes, steamed or roasted broccoli
  • Baked beans
  • Pesto beans + chili flakes
  • Chopped green salad and veggie gyro

Customize it the way you like it!

Add whatever spices you like to your waffles. Sweet or smoked paprika powder, chili, garlic or onion powder, fresh or dried herbs like basil, parsley, dill or thyme, nutmeg or cumin.

You can also add extra veggies to your batter. Chopped onions, grated zucchini or carrots, or chopped steamed broccoli work especially well here.

And of course play around with the toppings! The options are really endless!

  • 1/4 cup rice flour
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • salt, pepper

Instructions

  1. Peel and grate potatoes. Transfer to a clean kitchen towel, and wring out as much liquid, as possible.
  2. Add potatoes, rice flour, garlic powder, smoked paprika (or whatever spices you like), and a large pinch of salt and pepper to a bowl. Mix everything well together using your hands or a spoon.
  3. Preheat your waffle iron. Once hot, spray or brush with some oil, then add a large scoop of the potato mixture in the middle. Close and cook for about 5 minutes, or until golden and crispy.
  4. Using a knife or spatula, carefully remove the waffle from the waffle iron. Repeat with the remaining potato mixture.
  5. Serve waffles with toppings of your choice. Enjoy!

Notes

Depending on the size of your waffle iron, this recipe will make 4-8 waffles. For the best result (crispy on the outside, but soft on the inside), you want to add about 1 inch/2 cm of the potato mixture to the waffle iron.
