Ingredients

Units Scale
  • 14 oz / 400 g watermelon (2 slices, each about 1 inch / 3 cm thick)
Marinade
  • 1/4 cup apple cider vinegar
  • 1/4 cup soy sauce
  • 2 tbsp vegetable oil
  • 3 cloves of garlic
  • 1 sheet of nori
  • 1 tsp miso
  • 1 tsp maple syrup
  • salt, pepper

Instructions

  1. Cut off the rind of your watermelon slices. Place them into an oven safe dish.
  2. Add marinade ingredients to a blender, and blend until completely smooth.
  3. Cover watermelon slices completely with the marinade (use your hands or a spoon to coat the slices evenly).
  4. Bake at 360°F/180°C for an hour, or until the liquid evaporates completely and watermelon slices are soft and turned dark.
  5. Let watermelon cool completely, then slice or dice, depending on how you want to use your watermelon tuna. Enjoy!
