Vegan Hard Boiled Eggs

These little Vegan Hard Boiled Eggs are scarily realistic! Not only do they look a lot like real eggs, but they taste also so much like the real stuff. They have a great texture with a gently egg-y taste, and they are so fun to make. Plus they are very customizable and a great base for lots of other recipes.

What’s also really cool about this Vegan Hard Boiled Egg recipe, is that it’s pretty flexible: you can make your egg white softer or harder, depending on what you like. For the egg yolk, you can use my recipe below. White beans mimic the texture of yolk really well, and with some seasoning the taste is very spot on. If you like a super hard egg yolk, use firm tofu instead of white beans. It will give you a harder, grainier texture, similar to well cooked egg yolk. But if you prefer a runnier yolk, try THIS recipe.

You can also turn these into vegan deviled eggs. Simply add a little more mustard, pickle relish, chopped onions and herbs, and some garlic to your yolk mixture, then pipe those into the egg shells.

How to make Vegan Hard Boiled Eggs

Egg white

To make the egg white for vegan hard boiled eggs, simply blend together silken tofu, unsweetened plant milk and agar agar. Pour mixture into a pot, and bring to a gentle boil over medium heat. Stir and cook for 3-4 minutes, so agar agar is activated. Stir in black salt, and pour into egg shaped silicon molds and place in the fridge for an hour to set.

If you don’t have egg shaped molds, you can also use muffin molds instead. Obviously, they won’t look like eggs, but it doesn’t affect the taste.

Egg yolk

For a medium done egg yolk, simply add white beans, vegan mayo, turmeric, mustard, nutritional yeast and black salt to a food processor and blend until creamy. You can adjust the consistency, adding a little milk or more nutritional yeast, if needed. Taste, and add a splash of vinegar, if you like as well.

If you prefer a super hard yolk, use firm tofu (or half tofu half white beans) instead of just white beans in the recipe.

For a runny yolk, simply use starch and oil with some turmeric. You can find the recipe for it here.

And if you are making deviled eggs, add all your favorites: extra mustard, onions, garlic, herbs, capers, pickle relish, or whatever else you love.

Tofu variations

Silken tofu works best for this recipe. It blends into the perfect creamy and smooth texture, giving you a surprisingly realistic egg white base.

If you can’t find silken tofu, you can also use regular firm tofu. The texture will be slightly grainy (even when using a high speed blender), but it will still taste good.

How to serve Vegan Hard Boiled Eggs

You can serve Vegan Hard Boiled Eggs just as you’d serve regular eggs. Serve them for breakfast with a slice of toast and extra veggies. Add them to your salads or bowls. Or simply snack on them with some hot sauce or Maggi sauce.

These vegan eggs are great for meal prep as well, so feel free to double or triple the recipe, they will keep for a week in the fridge.

I like to keep the yolk and whites seperated first, then assemble them fresh, right before serving. But if you don’t mind, that the yolk will color the egg white after a while, you can also completely assemble them earlier, and store in the fridge like that.

Egg white
  • 5.3 oz/150 g silken tofu
  • 1 cup/240 ml unsweetened plant milk
  • 1 tsp agar agar powder
  • 1/4 tsp black salt
Egg yolk
  • 1/2 can white beans
  • 1/4–1/3 cup vegan mayo
  • 1 tbsp nutritional yeast
  • 1 tsp mustard
  • 1 tsp turmeric
  • 1/4 tsp black salt

Instructions

Egg white

  1. Add silken tofu, milk and agar agar to a blender, and blend until smooth. Transfer to a pot, and cook over medium heat, stirring occasionally, so it doesn’t form clumps. Cook for 3-4 minutes after reaching boiling point (so agar agar activates).
  2. Remove from heat and stir in black salt. Fill 10 egg shaped molds with the mixture. Let cool and harden in the fridge for at least an hour.

Egg yolk

  1. Place white beans, mayo, nutritional yeast, mustard, turmeric and black salt to a blender or food processor, and blend until creamy. Taste, and add more salt, or a splash of vinegar, if needed. Adjust consistency with a little plant milk or more mayo, if you like.

Assembly

  1. Once egg whites have hardened, gently pop them out of the molds.
  2. Using a melon baller or a small spoon, scoop out some of the egg whites to create space for the egg yolks.
  3. Fill the egg whites with the egg yolk mixture. You can use a spoon or a piping bag, depending on what look you are going for. Serve Vegan Hard Boiled Eggs immediately, or store them in the fridge for up to a week. Enjoy!

Notes

  • Some black salt can turn your egg white slightly grey. If you are worrying about the look, simply use it in the yolk, and then sprinkle the ready eggs with a little extra at the end.
  • If you prefer a runnier egg yolk, try this recipe using starch and canola oil instead.
