High-Protein Red Lentil Bread

Ingredients

  • 11.5 oz / 325 g red lentils, soaked overnight
  • 3 tbsp psyllium husk
  • 3 tbsp olive oil
  • 1 tsp garlic powder
  • 1/2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp mixed seeds

Instructions

  1. Drain and rinse soaked red lentils, then add to a blender together with psyllium husk, olive oil, garlic powder, baking powder, salt, and 2/3 cups or 150 ml water. Blend until completely smooth.
  2. Line a loaf pan with parchment paper, and pour red lentil mixture into the loaf pan. Sprinkle the top with seeds, and let stand for 15-30 minutes, so it can slightly firm up.
  3. Add Red Lentil Bread to a preheated oven at 360°F / 180°C. Bake for an hour, or until a toothpick inserted in the center comes out clean.
  4. Let bread cool completely before slicing and eating. Enjoy!
