- 12 oz / 350 g pasta of your choice, use GF if needed
- 1 can of white beans, rinsed and drained
For the sauce
- 7 oz / 200 g soft or silken tofu
- 3 cloves of garlic
- 1/2 cup of toasted walnuts
- 2 tbsp brown miso
- 2 tbsp nutritional yeast
- 1 lemon, juiced
- 1 tsp rice vinegar
- salt, pepper
For the topping
- 1/2 cup toasted walnuts
- 1 chili
- 3 tbsp fresh herbs of your choice
Instructions
- Prepare pasta according to package instructions. Drain, reserving some of the cooking water, and set aside.
- Add sauce ingredients to a blender, and start processing. Add reserved pasta water, until you reach desired consistency. Taste, and adjust seasoning if needed.
- For the topping chop walnuts, chili and herb finely.
- Pour sauce over the pasta, add white beans, and mix everything well together. Add more of the pasta water, if needed.
- Serve pasta warm or cold with walnut-chili topping. Enjoy!
