Salad Dressings

Although I love the simple lemon-oil combo the most, it’s good to have something else every now and then.

Here comes a few of my favorite dressings.


 

‘Honey’-Mustard Dressing

2 Tbsp olive oil

1 Tsp mustard

1 Tsp maple syrup

1 Tsp thyme

salt, pepper

1. Just shake everything together in a jar and pour over your salad.


Simple Basil Dressing

2 handful of basil

olive oil

lemon

1 clove of garlic

salt, pepper

1. Put everything in a food processor and blend until smooth. Add more lemon juice if you want it more thin. It is the best with any tomato based salad.


Lime-Tahini Dressing

1 Tbsp tahini

1 lime

1 clove of garlic

a little piece of ginger

olive oil

salt, pepper

1. Cut the garlic and ginger into very tiny pieces and shake everything together in a jar and pour over your salad. The dressing is especially great with chickpea and quinoa based salads.


Dried Tomato Pesto

6-7 dried tomatoes

8-10 cherry tomatoes

handful of basil

handful of cashew nuts

1 clove of garlic

olive oil

salt, pepper

1. Roast the cashew nuts and place them in a food processor with all the ingredients and blend for a minute. Pour it over any salad or pasta. Enjoy!
