I’m Evi, and I’m absolutely thrilled that you’re here. Whether you’re a seasoned vegan or just curious about plant-based living, you’ll find all sorts of delicious recipes on my site. From quick and easy weeknight meals to fancy, fun dishes for special occasions, there’s something for everyone.

A bit about me

I’m a photographer and recipe developer originally from Hungary, now living in the beautiful German countryside with my husband and our mischievous dog, Laika. I started Plants for Later (previously Green Evi) over 10 years ago to share my vegan food discoveries and favorite recipes. Though I’ve been vegetarian for almost 25 years, my true love affair with cooking began when I went fully vegan. What started as a lifestyle that seemed full of restrictions turned out to be the ultimate playground for creativity: turning mushrooms into steak, cashews into cheese, and tofu into just about anything. The possibilities are endless!

One of the things that makes me happiest is seeing more and more people getting interested in veganism. If my recipes can inspire even a small part of that movement, that’s just the coolest thing ever! 😊

With over 300 recipes on the site, there’s something here for everyone. Whether you’re looking for super healthy raw vegan dishes, comforting classics, veganized favorites, or some random foodie experiments.

When I first started, vegan options at the supermarket were basically nonexistent here in Germany, so everything – cheese, meat substitutes, even mayo – was made from scratch. These days, with so many amazing vegan products available, my recipes have a mix of DIY and convenient store-bought options. Times are changing, and I’m here for it!

When I’m not blogging, I work with some fantastic companies and magazines in the plant-based world as a food photographer and recipe developer. In my free time, you’ll often find me exploring farmers markets or foraging in the forest with Laika. Since moving to the countryside, I’ve also developed a passion for gardening. There’s nothing quite like growing your own beautiful tomatoes, cucumbers, chilies, pumpkins, and radishes. And kale of course. I love kale!
